Banana Walnut Bread

Ingredients

225g plain flour
100g butter, room temperature
1½ cup SIS Raw Sugar
80g walnuts, chopped
5-6 pieces ripe bananas
1 teaspoon baking powder
½ teaspoon vanilla essence
2 eggs

Method

  1. Preheat the oven to 180°C.
  2. Cut the bananas into chunks and blend until smooth using a food processor.
  3. In a mixing bowl, cream SIS Raw Sugar and butter.
  4. Add flour, baking powder, vanilla essence and eggs to the mixture.
  5. Add blended banana and walnut, mix until combined.
  6. Pour the mixture in a greased baking loaf pan and lined with baking paper.
  7. Bake for 35-45 minutes or until surface turn golden brown and skewer come out clean from the centre of the bread.
  8. Remove from the oven and leave on the rack to cool before removing from the loaf pan.
