For Crust
1 1/2 cup graham cracker crumbs
2 tablespoons SIS Demerara Sugar
7 teaspoon melted butter

For Cheesecake
910g cream cream, room temperature
200g SIS Icing Sugar
3 teaspoon lemon juice
1 1/2 teaspoon vanilla extract
4 eggs, room temperature

Method

  1. Prepare the crust. Preheat the oven to 160°C.
  2. Combine the graham cracker crumbs and SIS Demerara Sugar , stir well.
  3. Add melted butter, mix well
  4. Pour the mixture into the springform and press firmly to the bottom. Set aside.
  5. Cream the cream cheese in a stand mixer until smooth and creamy.
  6. Add in SIS Icing sugar, lemon juice and cream until smooth.
  7. Add in eggs at interval, vanilla extract until well combined.
  8. Pour the mixture into the springform and bake in the oven for 10 minutes.
  9. Remove from the oven and leave on the rack to cool for 1-2 minutes.
