Red Velvet Muffins

For Muffins
300g plain flour
240g butter, room temperature
300g SIS Caster Sugar
2 eggs
4 tablespoons cocoa powder
½ teaspoon salt
1 ¼ teaspoon baking soda
1 cup milk
1 teaspoon vanilla essence
1 teaspoon red food colours

For Frosting
300g SIS Icing Sugar

230g cream cheese, room temperature
240g butter, room temperature


  1. Prepare the muffins. Preheat the oven to 180°C.
  2. Cream butter, SIS Caster sugar and SIS Icing sugar.
  3. Add cocoa powder, salt, baking soda and eggs one at a time.
  4. Sift flour and milk at interval.
  5. Add in vanilla essence and red food colours to the mixture, mix well.
  6. Line the muffin tray with muffin cups, fill each cup till ⅔ full.
  7. Bake in the oven for 20 minutes until the skewer come out clean from the center of the muffins.
  8. Remove from the oven and leave on the rack to cool for 1-2 minutes.
  9. Prepare the frosting. Whisk all the ingredients until smooth and creamy.
  10. Pour the mixture into piping bag and spread it on top of the muffins.
