Toasted Nut and Demerara Ice Cream

200g mixed nuts, roughly chopped
1 egg white
1/3 cup SIS Demerara Sugar
1 tablespoon ground cinnamon
2 cups heavy cream
1 can (390g) sweetened condensed milk
3 tablespoons butter, room temperature
1/2 teaspoon vanilla essence


  1. Preheat the oven to 160°C.
  2. Spread the mixed nuts out evenly in the greased baking tray and bake until golden and crisp for about 45 minutes. Remove from oven and set aside.
  3. Whip the egg white until soft peak. Add SIS Demerara sugar, ground cinnamon, vanilla essence and mix well.
  4. Whip the heavy cream to stiff peaks.
  5. In a large bowl, add toasted mixed nuts to the sweetened condensed milk, mix well.
  6. Fold in the whipped cream.
  7. Pour into a 2-liter container and cover.
  8. Put into the freezer for at least 3 hours or until set.
