German Apple Pancake

INGREDIENTS

One apple

1 tsp ground cinnamon

1 tsp ground nutmeg

Pinch of salt

2-3 tbsp melted butter

Batter

1 egg

60ml milk

2-3 tsp of SIS caster sugar

¼ tsp of vanilla extract

Pinch of salt

3 tbsp all-purpose flour

Optional sprinkling of flaked almonds

Optional 1 tsp SIS icing sugar for dusting

Methods
  1. Melt butter in a small oven proof dish in a microwave.
  2. Preheat oven to 200° degrees.
  3. Cut the apple into quarters and cut out the seeded core.
  4. Slice the quarters lengthways thinly.
  5. Put apples into dish with melted butter and add the cinnamon, nutmeg and salt and mix until apple slices are even coated.
  6. Place dish in the oven and bake for 20-25 minutes.
  7. To prepare batter, combine the milk, egg, sugar, salt, vanilla. Once mixed, stir in the flour until incorporated.
  8. Once the apples have had their time in the oven, bring down the temperature to 180° degrees.
  9. Take the dish out, pour in the batter, sprinkle over the optional sliced almonds and put it back in the oven.
  10. Bake for about 15-18 minutes, until puffy and golden.
  11. Sprinkle icing sugar over the German Apple Pancake if desired.
  12. Serve warm and enjoy!
