INGREDIENTS
150g roasted peanuts, ground finely
20g roasted peanuts, for topping
125g plain flour
65g SIS Icing Sugar
70g peanut oil
1 egg yolk, for glazing
¾ teaspoon salt
METHODS
- Preheat the oven to 160°C.
- In a mixing bowl, combine ground peanuts, SIS Icing Sugar, flour and salt.
- Add peanut oil to the mixture and mix well.
- Knead the mixture to form a crumbly dough.
- Pinch about 7g of the dough and shape it into a ball. Flatten them slightly and place a peanut in the middle of each cookie.
- Mix egg yolk with ¼ teaspoon of water, brush the surface of the cookies.
- Bake in the oven for 15 minutes or until golden brown and cracked. Let them cool completely on a wire rack before storing them in an airtight container.
